For 2011, Michelin reduced the number of star restaurants in France while increasing the better-value Bib Gourmand awards. One French three-star restaurant lost a star while none were added to the top three-star category in France in 2011.

Michelin added 51 new stars to the best restaurants in the Michelin France 2011 Hotel and Restaurant Red Guide. However, deletions and demotions saw the actual number of star restaurants in France slip from 588 to 571. One Michelin three-star restaurant lost a star to slip to the two-star category while no new restaurants were awarded three stars in France for 2011. A record 601 French restaurants were awarded the Bib Gourmand distinction, which promises excellent food at a more reasonable price. 2011 is the first year since the introduction of the Bib Gourmand award in 1997 that Michelin listed more Bib Gourmand than star restaurants in France.

The almost 2,000-page Michelin France 2011 Hotel and Restaurant Red Guide describes 7,891 establishments throughout France in various price ranges and comfort classes. Michelin’s descriptions in the 2011 guide include 3,970 hotels, 502 guesthouses, and 3,419 restaurants.

The Michelin 2011 listing includes 601 Bib Gourmand restaurants where patrons can enjoy an excellent three-course menu for below €35 in Paris and cheaper than €29 in the rest of France. Michelin also include 1,326 good-value restaurants where it is possible to enjoy a simple but obviously good menu for below €19.

Michelin further describes 255 Bib Hotels. Michelin Bib Hotels in the 2011 France red guide must offer good accommodation and breakfast for two at below €75 or below €90 in major cities.

Michelin Star Restaurants in the Michelin France 2011 Red Guide

Michelin reduced the number of star restaurants in the Michelin France 2011 Hotel and Restaurant Red Guide to 571, down from 588 in the 2010 red guide. In 2011, Michelin awarded 51 new restaurants with star listings – deletions and demotions balance the figures.

The number of Michelin three-star restaurants in the France 2011 red guide slipped by one to 25 (10 in Paris). Michel Trama in Puymirol lost a star and was demoted to the two-star category.

In the 2011 France red guide, 76 restaurants (15 in Paris) have two Michelin stars – one less than last year. Five two-star restaurants are new entries while three were deleted from the star listing and four were demoted to a single star.

The one-star listing increased to 470 restaurants (45 in Paris), up from 455 in 2010. Michelin added 46 new restaurants to the list while 33 restaurants lost their stars.
